Harissa Roasted Tomatoes

Ingredients |

4 beefsteak tomatoes, halved
|

2 tablespoons harissa paste
|
|
 |
2 tablespoons extra virgin olive oil + little extra for drizzling |
|
|
|
1. Pre-heat the oven to 220C (fan oven 200C) gas mark 7.
2. Place the tomatoes cut side up onto a baking tray. Spread the harissa over the tomato halves. Roast in the oven for 12-15 minutes or until just softened but still holding their shape.
3. Drizzle over a little extra virgin olive oil. |
