Noodle Salad

Ingredients |

200g thread egg noodles, cooked and drained
|

 |
2 large carrots, peeled and cut into very fine strips
|
|
 |
225g spring greens, shredded finely blanched and refreshed
|
|
 |
1 bunch fresh coriander leaves (optional)
|
|
 |
freshly ground black pepper
|
|
 |
for the dressing
|
|
 |
4 tablespoons rapeseed or sunflower oil
|
|
 |
1 bunch spring onions cut into chunky strips
|
|
 |
3 tablespoons light soy sauce
|
|
 |
juice 1 large orange
|
|
 |
5cm / 2 inch piece ginger, peeled and grated
|
|
 |
1 large clove garlic, crushed
|
|
 |
freshly ground black pepper |
|
|
|
1. In a bowl mix the dressing ingredients together.
2. In a mixing bowl, combine the noodles,, carrots, spring greens and half the coriander leaves. Add the dressing and toss together.
3. Serve with the sesame chicken.
