Noodle Salad

Sizing Information

1. In a bowl mix the dressing ingredients together.

2. In a mixing bowl, combine the noodles,, carrots, spring greens and half the coriander leaves. Add the dressing and toss together.

3. Serve with the sesame chicken.

  • 200g thread egg noodles, cooked and drained
  • 2 large carrots, peeled and cut into very fine strips
  • 225g spring greens, shredded finely blanched and refreshed
  • 1 bunch fresh coriander leaves (optional)
  • freshly ground black pepper
  • for the dressing
  • 4 tablespoons rapeseed or sunflower oil
  • 1 bunch spring onions cut into chunky strips
  • 3 tablespoons light soy sauce
  • juice 1 large orange
  • 5cm / 2 inch piece ginger, peeled and grated
  • 1 large clove garlic, crushed
  • freshly ground black pepper
