1. In a bowl mix the dressing ingredients together.
2. In a mixing bowl, combine the noodles,, carrots, spring greens and half the coriander leaves. Add the dressing and toss together.
3. Serve with the sesame chicken.

- 200g thread egg noodles, cooked and drained
- 2 large carrots, peeled and cut into very fine strips
- 225g spring greens, shredded finely blanched and refreshed
- 1 bunch fresh coriander leaves (optional)
- freshly ground black pepper

- 1 bunch spring onions cut into chunky strips
- 3 tablespoons light soy sauce
- juice 1 large orange
- 5cm / 2 inch piece ginger, peeled and grated
- 1 large clove garlic, crushed
- freshly ground black pepper
